Shiitake-basil green beans

Ingredients

  • 500-g green beans

  • 250-g shiitake mushrooms

  • 3 green onions

  • 1 tbsp olive oil

  • 1/4 cup water

  • 1/2 tsp salt

  • 1/3 cup chopped fresh basil

  • 1 1/2 tbsp freshly squeezed lemon juice

  • Pinch freshly ground black pepper

Instructions

  • Bring a large saucepan of water to a boil. Meanwhile, trim beans. Slice and discard dirty ends from mushroom stems. Slice large mushrooms in half. Thinly slice green onions. When water is boiling, add beans. Cook 3 minutes, then drain. Set beans aside.

  • Place saucepan over medium heat. Add oil. When hot, add mushrooms. Stir often until almost tender, 3 to 5 minutes. Add water, then beans, onions and salt. Stir often until beans are tender-crisp, 2 to 4 minutes. Stir in basil, lemon juice and pepper. Remove from heat. Great with Halibut With Chili-Orange Butter (also in the Recipe File).
