1/4 cup light sour cream
1 1/2 tsp Dijon mustard
1 tsp tarragon
1/2 tsp salt
1/4 tsp white pepper
500 g ground chicken
3 green onions, thinly sliced
1/4 cup bread crumbs
1 tbsp butter
1 tsp vegetable oil
In a bowl, whisk egg with sour cream, Dijon and seasonings. Add chicken, green onions and bread crumbs. Work with a fork until blended. Shape into 4 equal burgers. Because these burgers are soft, they're best cooked in a frying pan.
Heat butter and oil together in a large frying pan set over medium-low heat. Add burgers and sauté, uncovered, until browned and no pink remains in centre, from 8 to 10 minutes per side. Serve on a multigrain bun with a tossed green salad.
