Saucy Mexican eggs

Ingredients

  • 1 cup salsa

  • 4 eggs

  • sprinkle grated cheddar, or Monterey Jack cheese

Instructions

  • Heat salsa in a medium-size frying pan over medium. Crack in 4 eggs. Sprinkle with grated cheddar or Monterey Jack cheese. Cover. Cook over medium-low heat until eggs are done, 3 to 4 minutes.

We love eggs - they're great for a leisurely weekend brunch yet fast enough to scramble on a weekday morning for a protein boost.
