Simple rapini salad

Simple rapini salad recipe

Chatelaine Triple Tested

Ingredients

  • 1 tsp salt

  • 1 bunch rapini, ends trimmed

  • 3 tbsp lemon juice

  • 3 tbsp olive oil

  • 1 tbsp Dijon mustard

  • 1 tbsp honey

  • 1 garlic clove, minced

  • 1 pint grape tomatoes, halved

  • 41643 red onion, thinly sliced

Instructions

  • BOIL a large pot of water. Add 1/2 tsp salt to boiling water along with rapini. Cook 2 min, then drain and rinse with cold running water. Spin dry in a salad spinner.

  • WHISK lemon juice with oil, Dijon, honey, garlic and remaining salt in a large bowl. Add vegetables and toss until coated.

Calories 157, Protein 5g, Carbohydrates 13g, Fat 11g, Fibre 4g, Sodium 622mg.

Serve with Herbed marmalade burgers.
