1 tsp vegetable oil
3 cups Smartly Seasoned Beef, see tip below
1/2 cup water
796-mL can diced tomatoes, including juice
1 tsp paprika or Italian seasoning
1/4 tsp salt
1 large green bell pepper, seeded and chopped
1 cup uncooked long-grain rice
Heat oil in a large saucepan set over medium-high heat. Crumble in beef mixture (see below). Stir occasionally until beef is browned and separated into small pieces, about 5 to 6 minutes.
Pour in water and tomatoes, including juice. Stir in paprika (or Italian seasoning), salt and chopped green pepper. Bring to a boil. Stir in rice, cover and reduce heat to low. Simmer 20 to 25 minutes.

While the Spanish rice is simmering, toss a green salad and steam broccoli and carrots for a nutritious but no-fuss dinner.
If you have not made our Smartly seasoned beef (also in the Recipe File), you may substitute 1 pound (500 g) ground lean beef mixed with 1 chopped onion, 1 minced garlic clove, 2 teaspoons (10 mL) dried parsley, 3/4 teaspoon (7 mL) Worcestershire sauce, dash of Tabasco and pinches of salt and pepper.
