Curry butter with nectarine

Ingredients

  • 1/2 cup butter, at room temperature

  • 1 1/2 tsp curry paste

  • 1 nectarine

Instructions

  • In a small bowl, stir butter with curry paste until evenly mixed. Remove and discard pit from nectarine. Slice into thin wedges. Spread curry butter on whole grain bread or a sliced baguette. Top with nectarine wedges or stuff them between bread.

This simple stir-together spread is excellent with any crusty bread. Top it off with slices of deli meat or use just as it is! It's a great make ahead - simply cover and refrigerate up to 3 days.
