Creamy edamame spread

Ingredients

  • 3 cups frozen shelled edamame, thawed

  • 1 garlic clove

  • 1/4 tsp salt

  • 2/3 cup olive oil

Instructions

  • PURÉE edamame with garlic and salt in a food processor. Gradually pour olive oil through the spout until mixture is smooth. Season with fresh pepper. Refrigerate, covered, up to 1 week.

This spread is delicious on our superfood sandwich.
