This nutty pilaf makes a wholesome, hearty side dish.
1 cup wild rice
4 cups water
1 tsp canola oil
1/2 tsp salt
1/3 cup chopped cilantro
1 green onion, sliced
1 tbsp lime zest
COMBINE rice with water, oil and salt in a medium saucepan. Boil, then reduce heat to low. Simmer, covered, until rice is tender, about 40 min. Drain. Stir in cilantro, green onion and lime zest.
