Wild Rice Pilaf

Chatelaine Triple Tested

This nutty pilaf makes a wholesome, hearty side dish.

Ingredients

  • 1 cup wild rice

  • 4 cups water

  • 1 tsp canola oil

  • 1/2 tsp salt

  • 1/3 cup chopped cilantro

  • 1 green onion, sliced

  • 1 tbsp lime zest

Instructions

  • COMBINE rice with water, oil and salt in a medium saucepan. Boil, then reduce heat to low. Simmer, covered, until rice is tender, about 40 min. Drain. Stir in cilantro, green onion and lime zest.

Calories 155, Protein 6g, Carbohydrates 31g, Fat 2g, Fibre 3g, Sodium 292mg.
