Raita salad

Ingredients

  • 2 plum tomatoes

  • 1 English cucumber

  • 1/2 small red onion

  • 1/2 cup coarsely chopped fresh basil, coriander or parsley

  • 1 cup plain yogurt, preferably 2% m.f.

  • 1 tsp salt

  • 1 head romaine lettuce

Instructions

  • Cut tomatoes in half. Squeeze out and discard seeds. Finely chop. Place in a medium-size bowl. Slice cucumber in half lengthwise. With a spoon, scoop out and discard seeds. Grate cucumber using large holes of a box grater. Using your hands, squeeze out excess liquid. Discard liquid. Finely chop onion. Coarsely chop basil. Add all to bowl. Stir in yogurt and salt.

  • Cut romaine into long thin strips and place on a platter. Then spoon tomato mixture overtop.

Raita (pronounced "rye-ta") is a yogurt-based salad often served with Indian food as a cooling contrast to spicy dishes. It's great with our Indian Grilled Fish.
