2 plum tomatoes
1 English cucumber
1/2 small red onion
1/2 cup coarsely chopped fresh basil, coriander or parsley
1 cup plain yogurt, preferably 2% m.f.
1 tsp salt
1 head romaine lettuce
Cut tomatoes in half. Squeeze out and discard seeds. Finely chop. Place in a medium-size bowl. Slice cucumber in half lengthwise. With a spoon, scoop out and discard seeds. Grate cucumber using large holes of a box grater. Using your hands, squeeze out excess liquid. Discard liquid. Finely chop onion. Coarsely chop basil. Add all to bowl. Stir in yogurt and salt.
Cut romaine into long thin strips and place on a platter. Then spoon tomato mixture overtop.
