1/2 cup pickled ginger, drained
1/2 cup chopped cilantro
1 1/2 tsp rice vinegar
1/2 tsp granulated sugar
Pat ginger dry with paper towel, then chop. Place in a medium bowl. Stir in cilantro, vinegar and sugar.
