1 tbsp olive oil
2 fish steaks, such as halibut, at least 1-in. thick
1 cup flavourful meatless tomato sauce
1 tsp basil pesto
Preheat oven to 500F (260C). Pour oil into a 9-inch (23-cm) pie plate and turn fish in oil until coated. Pour spaghetti sauce around fish. Spread 1/2 teaspoon (2 mL) pesto on top of each fish steak. Place a piece of foil loosely overtop. Bake in centre of 500F (260C) oven for 15 minutes, stirring sauce every 5 minutes. Serve with rice and a vegetable sauté.
