Grilled vegetable & chicken-stuffed baguette

Ingredients

  • 1 baguette, about 16-in. long

  • 4 cups sliced cooked chicken

  • 1 large tomato

  • 1 small red onion

  • 1/4 cup Greek or Italian salad dressing

  • 1 ripe avocado, peeled

  • 4 large leaves of romaine

Instructions

  • Lightly oil grill and heat barbecue to medium-high. Slice baguette into 4 equal pieces, then slice each in half lengthwise. Discard chicken skin. Tear or slice meat into strips. Cut tomato and onion into thick rounds. Brush cut sides of baguette and vegetables with dressing.

  • Place bread on grill. Barbecue until toasted, 1 to 2 minutes per side. Remove. Place veggies on grill. Barbecue until lightly charred, turning occasionally, 4 to 7 minutes. Watch tomato, as it cooks quickly. Remove vegetables as soon as they are done to a cutting board.

  • Slice avocado into thin wedges. Cover baguette bottoms with chicken, tomato, onion, avocado and romaine. Add baguette tops. Now all that's needed is a cold beer!
