Goma Chicken Salad

Napa cabbage, sesame oil and rotisserie chicken adds flavour and protein to this salad.

Ingredients

  • ½ cup mayonnaise

  • 3 tbsp toasted sesame seeds, divided

  • 4 tsp rice vinegar

  • 2 tsp sesame oil

  • 1 ½ tsp soy sauce

  • ½ tsp brown sugar

  • 8 cups thinly sliced napa cabbage, about ½ small cabbage

  • 3 cups shredded rotisserie chicken, skin and bones removed

  • 3 green onions, thinly sliced

  • 1 English cucumber, thinly sliced into half moons

  • 1 cup coarsely chopped cilantro

  • Thinly sliced fresh red chili, optional

Instructions

  • Whisk mayo with 2 tbsp sesame seeds, vinegar, sesame oil, soy and brown sugar in a large bowl until smooth.

  • Add cabbage, chicken, green onions and cucumber to dressing. Toss to combine. Transfer to a platter. Sprinkle with cilantro, chili and remaining 1 tbsp sesame seeds.
