Key West mango and lime salad dressing

Chatelaine Triple Tested

Ingredients

  • 1 small ripe mango, peeled, stoned and diced

  • 2 small limes, grated for zest and juiced

  • 2 tsp clear honey

  • 3 tbsp avocado oil

  • 1 red chili, seeded and finely chopped

  • salt

  • pepper

Instructions

  • Place the mango in a liquidiser with the lime zest, juice, honey and a little salt and pepper and blend until smooth, add the oil and blend again.

  • Transfer to a bowl and stir in the chilli/chile.

  • Adjust seasoning and serve.

This is a fantastic alternative dressing for a prawn cocktail and looks really pretty.
