1 small ripe mango, peeled, stoned and diced
2 small limes, grated for zest and juiced
2 tsp clear honey
3 tbsp avocado oil
1 red chili, seeded and finely chopped
salt
pepper
Place the mango in a liquidiser with the lime zest, juice, honey and a little salt and pepper and blend until smooth, add the oil and blend again.
Transfer to a bowl and stir in the chilli/chile.
Adjust seasoning and serve.
This is a fantastic alternative dressing for a prawn cocktail and looks really pretty.
