Pizza Burgers 2007

Ingredients

  • 2 tomatoes

  • 2 yellow bell peppers

  • 1/2 small red onion

  • 4 homemade burgers

  • 1 tsp Italian seasoning

  • 1/2 cup grated mozzarella

  • salt

  • pepper

Instructions

  • Oil grill and heat barbecue to medium. Slice tomatoes in half, then squeeze out and discard seeds and juice. Cut peppers into quarters. Cut onion into rounds. Lightly brush vegetables with oil. Place on grill. Sprinkle both sides of burgers with Italian seasoning.

  • Place burgers on grill. Barbecue with lid closed until veggies are lightly charred. Tomatoes will need about 3 min a side, peppers and onion 6 min a side. Remove to a cutting board as each is done. Grill burgers until meat is firm when pressed, 6 to 8 min per side.

  • As soon as burgers are removed from grill, sprinkle with cheese. Then coarsely chop tomatoes, pepper and onion. Place in a medium-sized bowl. Sprinkle with a generous pinch of Italian seasoning, salt and pepper and stir to evenly mix. Spoon over cheese-topped burgers. Burgers are great on grilled focaccia.
