Fast shepherd's pie

Ingredients

  • 1 large baking potato

  • 1 tsp butter

  • 2 tbsp milk

  • 125 g lean ground beef

  • 1 tbsp ketchup

  • 1/2 cup frozen corn or mixed vegetables

Instructions

  • Pierce potato in several places and microwave, uncovered, on high until soft, about 5 minutes. Cut in half and scoop out potato. Using a fork, mash with butter and milk.

  • In a 9x5-in. (2-L) glass loaf dish, stir beef with ketchup. Microwave on high, uncovered, for 1 minute. Stir and break up any lumps, then continue microwaving for 1 more minute.

  • Finely chop corn or vegetables or leave whole. Stir into meat. Smooth into an even layer. Top with potatoes, covering meat evenly. Microwave, uncovered, for 2 minutes. If you like a golden potato top, slide casserole under a preheated broiler for 1 to 2 minutes. Watch to prevent browning. Cool to lukewarm before serving.

Shepherd's baked potato

After stirring corn or mixed vegetables into beef mixture in above recipe, spoon mixture into scooped-out potato shells. Top with potatoes, covering meat evenly, and proceed with recipe, microwaving, uncovered, until hot, about 2 minute.
