A fun fiesta dinner is a snap to whip up. To make our super-speedy tacos, use a package of store-bought taco seasoning and ground beef.
2 green onions
1 egg
35-g pkg taco seasoning, or fajita seasoning
500 g lean ground beef, or ground chicken
8 large taco shells
Preheat oven to 425F (220C). Lightly oil or spray an 8- or 9-inch (2- or 2.5-L) square baking dish. Thinly slice green onions. In a medium-size bowl, whisk egg with taco seasoning. Crumble in meat. Add onions. Using your hands or a fork, work just until evenly mixed. Turn into prepared dish and pat evenly to spread out.
Bake in centre of preheated oven until meat is firm to the touch and edges pull away from pan sides, about 25 minutes. Drain fat from pan. Let meat stand 5 minutes. Cut into 4 squares, then slice each square in half to make 8 pieces. Tuck into taco shells. Add toppings such as grated cheese, chopped tomatoes, shredded lettuce, sour cream and salsa.

Grocery stores also sell taco kits that include shells, sauce and seasoning mix. All you need is meat and toppings.
