Spice-rubbed pork tenderloin

Ingredients

  • 2 tbsp olive oil

  • 1 tsp ground cumin

  • 1 tsp coriander

  • 1 tsp dried oregano leaves

  • 1 tsp brown sugar

  • 1/2 tsp garlic powder

  • 1/2 tsp salt

  • 1/2 tsp ground black pepper

  • 1/4 tsp ground ginger

  • 1 pork tenderloin, about 375 g

Instructions

  • Lightly oil grill and heat barbecue to medium. In a small bowl, stir oil with seasonings. Pat meat dry with paper towels. Rub mixture evenly over pork. Grill with lid closed, turning meat occasionally, until springy when pressed and an instant-read thermometer inserted into thickest part of pork reaches 155F (70C), 20 to 25 minutes. Remove from grill. Let stand 5 minutes, then slice. Delicious with tzatziki. Round out dinner with our Grilled Ratatouille Salad (also in the Recipe File).
