Bulgogi and kimchi are ubiquitous in Korean cuisine. Kimchi (an addictive, fiery cabbage pickle) is available in grocery stores.
2/3 cup chopped kimchi
2 tbsp thinly sliced green onion
2 tsp toasted sesame seeds
1/4 cup chopped onion
2 garlic cloves
1-in. piece fresh ginger, chopped
2 tbsp honey
1 tbsp dry sherry or apple juice
1 tbsp low-sodium soy sauce
1 tbsp sesame oil
COMBINE onion with garlic, ginger, honey, sherry, soy and sesame oil in a food processor. Purée until smooth. Scrape into a medium saucepan. Boil over medium-high until mixture thickens slightly, 3 to 5 min.
ADD grilled hot dogs to sauce and turn to coat. Let stand 4 min.
ARRANGE hot dogs on buns. Spoon more sauce on dogs, then top with kimchi, green onion and sesame seeds.
