Ottawa’s 107 Fourth Avenue Wine Bar & Café serves this tipple, but owner Dave Eaton refuses to take credit: He discovered it at Aperitivo Et Al in Bellagio, Italy, and it’s named after the bartender there who created it.
1 orange, cut into wedges (for garnish)
brown sugar
3 tbsp Martini Rosso or red vermouth
juice of 1/2 orange
1/3 cup Prosecco
Run an orange wedge around the rim of a rocks glass, then turn upside down onto a plate of brown sugar to coat
Fill glass with ice. Add red vermouth and orange juice. Top with prosecco.
