Chatelaine Triple Tested

This fresh, crunchy salad is served with almost every meal in the Middle East. Don’t make it too far in advance, or it will become soupy.

Ingredients

  • 4 tomatoes, diced

  • 1 English cucumber, seeded and diced

  • 1/2 red onion, finely diced

  • 1/2 tsp salt

  • 3 tbsp olive oil

  • 1 tbsp lemon juice

  • 3 tbsp parsley

Instructions

  • COMBINE tomatoes with cucumber, onion and salt in a large bowl. Season with fresh pepper. Stir in oil, lemon juice and parsley until well coated.
