This fresh, crunchy salad is served with almost every meal in the Middle East. Don’t make it too far in advance, or it will become soupy.
4 tomatoes, diced
1 English cucumber, seeded and diced
1/2 red onion, finely diced
1/2 tsp salt
3 tbsp olive oil
1 tbsp lemon juice
3 tbsp parsley
COMBINE tomatoes with cucumber, onion and salt in a large bowl. Season with fresh pepper. Stir in oil, lemon juice and parsley until well coated.
