Ingredients

  • 2 cups fresh corn kernels

  • 1/4 cup cornstarch

  • 1 1/2 cups grated old cheddar

  • 2 thinly sliced green onions

  • 1 egg, beaten

  • 1/4 tsp salt

  • fresh black pepper, to season

Instructions

  • PREHEAT oven to 400F.

  • TOSS fresh corn kernels with cornstarch, then stir in cheddar, green onions, egg and salt. Season with fresh pepper.

  • SCOOP 1/4-cup portions onto a parchment-lined baking sheet. Gently press down until they’re 3-in. wide and 1/4-in. thick.

  • BAKE in top third of oven, flipping halfway through, until fritters are firm and golden on the bottom, about 20 min.
