2 cups fresh corn kernels
1/4 cup cornstarch
1 1/2 cups grated old cheddar
2 thinly sliced green onions
1 egg, beaten
1/4 tsp salt
fresh black pepper, to season
PREHEAT oven to 400F.
TOSS fresh corn kernels with cornstarch, then stir in cheddar, green onions, egg and salt. Season with fresh pepper.
SCOOP 1/4-cup portions onto a parchment-lined baking sheet. Gently press down until they’re 3-in. wide and 1/4-in. thick.
BAKE in top third of oven, flipping halfway through, until fritters are firm and golden on the bottom, about 20 min.
