It's all butter, all the time for this free-form pastry, which has tons of flavour. The best part? The messier the shape, the more rustic it looks.
1 1/4 cups all-purpose flour
1 tsp granulated sugar
1/2 tsp salt
1/2 cup cold unsalted butter, cubed
3 to 5 tbsp ice-cold water
STIR flour with sugar and salt in a large bowl until combined. Add butter. Using your fingertips, work mixture until finely crumbled. Stir in ice water just until pastry can easily be formed into a ball. Add more ice water, 1 tbsp at a time, if needed. Dough should not be sticky. Form into a disc. Wrap with plastic and chill in refrigerator for 30 min.
