On Black Foodie, Eden Hagos covers a rich landscape of African, Caribbean and local foods. Berhan, the brand of East African teff she prefers for this bowl, mills its teff in Barrie, Ont.
1 cup teff grain
1 cup water
1 cup almond milk
1 tsp cinnamon
1 tbsp maple syrup
1 tbsp pecan butter
1 tsp slivered almonds
fresh berries, for serving
Bring teff to a boil in water and almond milk. Reduce heat and simmer for 15 min until liquid is absorbed and teff is soft, then add cinnamon and maple syrup. Serve hot and top with pecan butter, almonds and berries, as well as additional almond milk, maple syrup and cinnamon.
