Vanilla bean pods

Here's what we suggest you do with leftover vanilla bean pods

Scented sugar
Coarsely chop pod and place in sugar in a jar with a tight-fitting lid. Let sit for 1 week, shaking occasionally, before using. Substitute for plain sugar in your baking for an extra flavour boost.

Homemade sweetener
Combine pod with 1 cup each sugar and water in a small saucepan. Bring to a boil, then turn off heat. Let stand until cool and refrigerate for up to 1 week. Use to flavour homemade iced coffees, teas or cocktails.
