Liven up your leftovers

Turn leftovers into fresh and tasty meals

Leftovers rarely get the respect they deserve. The word itself suggests unwanted food—but that's not the case at all. They're an added bonus. Use leftovers for lunch the next day or as a base for an entirely new meal with these three easy ideas.

Turn leftover Cider-glazed turkey into a frittata.
Whisk together a few eggs, slivers of turkey, colourful chopped peppers and a handful of grated Swiss cheese and bake in a pie plate for an easy oven dinner.

Make a Mexican sandwich roll from our Mushroom-Pepper Crusted Rib Roast.
Cut leftover beef into strips and place in a spinach or sun-dried tomato flour tortilla. Sprinkle with chili powder, dollop with salsa and top with grated cheddar cheese. Wrap in foil and heat in oven. Stir sour cream with a little salsa for a creamy dipping sauce.

Jazz up a can of tomato or mushroom soup with a generous helping of crumbled blue cheese, add a lashing of sherry and top it off with a sprinkling of thinly-sliced green onions.
