Red cabbage

Here’s what we suggest you do with leftover red cabbage.

Speedy Sauerkraut

Fry 8 slices chopped bacon in a pot until crisp. thinly slice 1/2 red cabbage and 1 onion. Add to pot with 1/2 cup cider vinegar, 1/4 cup each brown sugar and water, 1/2 tsp salt and 1/4 tsp caraway seeds. Simmer, covered, 30 min.

Grate 1/4 red cabbage with 1 carrot, 1 onion and 1/4 peeled rutabaga. Sauté in 1 tbsp oil in a large pot. Add 1 minced garlic clove and 4 cups vegetable broth. Bring to a boil and add 3 tbsp red-wine vinegar, 2 tsp sugar and 1/4 tsp salt. Simmer 1 hour.
