Quick oats

Here’s what we suggest you do with leftover quick oats.

Easy granola bites Toast 1 cup quick oats in pan until golden. Stir with 1/4 cup each chopped pitted dates, sliced almonds, honey and almond butter. Roll into 1-in. balls and coat with cocoa or coconut. Refrigerate until firm, 15 min. Serve chilled.

Creamy tomato soup Sauté 1 chopped onion in 2 tsp oil until soft. Add 2 minced garlic cloves, 1/2 tsp cumin, 1/4 tsp coriander and 1/8 tsp cinnamon. Stir in 2 tbsp tomato paste, 2 cups vegetable broth, 3 tbsp quick oats and 1/2 tsp salt. Cook until thickened. Purée in blender before serving.
