We love roasting our vegetables when the weather starts to cool, and beets are a classic autumn vegetable.Though I love beets in their raw form, roasting them changes the flavour profile completely -- turning them from earthy and crunchy to sweet and tender. They are also very healthy and high in fibre. Unfortunately, this vegetable can leave a stain on your hands (and everything it touches).
