Cabbage, Savoy

Here's what we suggest you do with leftover Savoy cabbage

Winter slaw

Whisk in a large bowl 1/4 cup each extra-virgin olive oil and grated parmesan, 2 tbsp lemon juice, 1 tbsp honey, 1 minced garlic clove and 1 tsp each lemon zest and Dijon mustard. Toss with 1/2 head shredded Savoy cabbage, 1 cup chopped prosciutto and 1 grated apple.

Slimming veggie soup

Heat 2 tsp oil in a pot over medium-high. Add 3/4 cup each diced carrots and onion and 2 tbsp tomato paste. Cook for 3 min. Stir in 2 cups each thinly sliced cabbage and vegetable broth. Season with pepper. Cook, covered, until vegetables are tender, about 10 min. Sprinkle with fresh dill.
