Preheat oven to 400F. Slice 12 baby potatoes in half. Using a melon baller, scoop out flesh from each half, leaving at least 1/4 in. of flesh around sides and bottom. Place hollowed-out potatoes on a foil-lined baking sheet, cut-side up. Bake until tender, 20 to 25 min. Meanwhile, cut 4 slices prosciutto into strips. Stuff potatoes with prosciutto, then top with about 3/4 cup finely grated cheddar cheese. Bake until cheese is melted, about 2 more min. Top each half with sour cream and finely chopped chives. Serve warm. Makes 24.
