Heavenly variations of this classic holiday staple

1 Fruit and nuts
Add diced apples and pears to stuffing along with toasted walnuts and fresh thyme.
2 Cajun
Use Cajun seasoning mix in place of poultry seasoning. Stir in minced jalapeno and diced, cooked andouille or spicy chorizo sausage.
3 Italian
In place of savoury English sausage, use hot Italian. Sauté minced garlic and diced red pepper with onion. Mix chopped fresh basil and grated Parmesan into finished stuffing.
4 Asian
Sauté grated ginger and chopped, soaked dried mushrooms with onions, then add a dash of sesame oil. Stir in sliced green onions, water chestnuts and sesame seeds.
5 French
Sauté chopped shallots or leeks with onions. Use crusty baguette for bread along with usual seasonings. Add chopped fresh tarragon and grated lemon peel to finished stuffing.
6 Indian
Replace part of the classic seasonings with cumin, coriander or garam masala. Add raisins or currants with chopped sweet pepper, cilantro and grated orange peel.
7 Hawaiian
Stir toasted coconut, chopped macadamia nuts and diced dried pineapple into stuffing.
8 Wholesome country
For bread, use a mix of crusty white and whole wheat. Choose red onion and sauté with lots of celery and English sausages. Add chopped fresh sage and savory.
9 Mediterranean
Use olive oil in place of butter to sauté onions and chopped fennel. Stir in sliced olives, capers and toasted pine nuts.
10 Canadian
Finish cooking onions with a splash of maple syrup. Stir chopped apples, sautéed Oktoberfest sausages and dried cranberries into finished stuffing.
