Chatelaine Triple Tested

This fragrant Middle Eastern spice blend is a delicious seasoning for chicken, fish and hummus. Give a jar on it's own or bake up a pan of crisp crackers to accompany it.

Ingredients

  • 1 cup sesame seeds, (150 g)

  • 3/4 cup dried thyme, (35 g)

  • 3 tbsp packed lemon zest, from about 4 lemons (12 g)

  • 1 tbsp dried marjoram

  • 4 tsp kosher salt

Instructions

  • PREHEAT oven to 350F. Place sesame seeds on a rimmed baking sheet. Toast in centre of oven until lightly golden, 5 to 6 min. Stir in thyme, lemon zest, marjoram and salt until combined. Return baking sheet to oven and toast 5 more min. Let cool. Spoon into small bags or jars. Za’atar will keep well, stored in a cool place, up to a month.
