Thai fajitas

Ingredients

  • 1 lime

  • 1 tbsp grated fresh ginger

  • 2 tbsp chopped fresh coriander, or mint

  • 1/2 tsp salt

  • pinch cayenne pepper

  • 2 green onions

  • 2-Jan English cucumber

  • 1 large carrot

  • 500 g cooked roast beef, cut into strips, about 3 cups

  • 6 6-in. flour tortillas

Instructions

  • Finely grate peel from 1 lime and squeeze out 1/4 cup juice. Stir with oil, ginger, coriander, salt and cayenne. Thinly slice green onions. Cut cucumber and carrot into long thin julienned strips. Stir into lime mixture along with beef strips.

  • Divide mixture among warm tortillas and roll up. Since cucumber tends to water out, serve these rolls right away.

Our no-cook beef rolls have plenty of crunch, texture and tang. Stop at the deli for sliced roast beef or use up that Sunday roast in a way that doesn't scream "leftovers."
