1 lime
1 tbsp grated fresh ginger
2 tbsp chopped fresh coriander, or mint
1/2 tsp salt
pinch cayenne pepper
2 green onions
2-Jan English cucumber
1 large carrot
500 g cooked roast beef, cut into strips, about 3 cups
6 6-in. flour tortillas
Finely grate peel from 1 lime and squeeze out 1/4 cup juice. Stir with oil, ginger, coriander, salt and cayenne. Thinly slice green onions. Cut cucumber and carrot into long thin julienned strips. Stir into lime mixture along with beef strips.
Divide mixture among warm tortillas and roll up. Since cucumber tends to water out, serve these rolls right away.
