Speedy couscous supper

Ingredients

  • 2 cups dry couscous, or 340-g pkg

  • 2 cups diced, cooked lean chicken, ham, beef or extra-firm tofu

  • 2 grated peeled carrots, or 1 small chopped zucchini or 1 thinly sliced celery stalk

  • 2 cups orange juice

  • 1/4 cup chopped fresh basil, or 1 tsp dried basil (optional)

  • 2 finely chopped green onions, or 1/4 cup finely chopped red onion

  • 1/2 tsp salt

  • 1/2 tsp freshly ground black pepper

Instructions

  • Place couscous, chicken and carrots in a large heatproof serving bowl. Heat orange juice in a saucepan set over high heat or in a microwave until boiling. Stir into couscous. Cover tightly with a plate, a piece of foil or plastic wrap. Let stand for 5 minutes. Then sprinkle with basil, onions, salt and pepper. Stir gently until evenly mixed.
