4 plums, cut into wedges
1 shallot, chopped
3 to 4 tsp brown sugar
1 tbsp port
2 whole star anise
1 tsp olive oil
Preheat oven to 425F. Line an 8 × 8-in. baking dish with parchment paper. Combine all ingredients and spread in one layer in the baking dish. Roast, stirring occasionally until plums begin to soften, 20 to 25 min.
Remove from oven. Discard star anise. Using a potato masher, gently mash and let cool 30 min.
Refrigerate up to a week. Serve with artisanal cheese from the market.
