Roasted plum chutney

Roasted plum chutney

Ingredients

  • 4 plums, cut into wedges

  • 1 shallot, chopped

  • 3 to 4 tsp brown sugar

  • 1 tbsp port

  • 2 whole star anise

  • 1 tsp olive oil

Instructions

  • Preheat oven to 425F. Line an 8 × 8-in. baking dish with parchment paper. Combine all ingredients and spread in one layer in the baking dish. Roast, stirring occasionally until plums begin to soften, 20 to 25 min.

  • Remove from oven. Discard star anise. Using a potato masher, gently mash and let cool 30 min.

  • Refrigerate up to a week. Serve with artisanal cheese from the market.

Kitchen Tip:

If plums are tart, use the higher amount of sugar; if they’re sweet, use less sugar.
