Chatelaine Triple Tested

Ingredients

  • 8 slices bacon

  • 1/4 cup orange juice

  • 4 tsp white-wine vinegar

  • 1/2 tsp granulated sugar

  • 3 tbsp olive oil

  • 6 Medjool dates, pitted

  • 1 head red-leaf lettuce, torn into bite-sized pieces, about 6 cups

  • 8 cups mixed salad greens

Instructions

  • Cook bacon in a large frying pan over medium, until crisp, about 10 min. Pat with paper towels, then coarsely crumble.

  • Whisk orange juice with vinegar and sugar. Whisk in oil.

  • Chop dates, then toss with bacon and lettuce and greens. Just before serving, drizzle with dressing and toss to mix.

Crisp bacon and sweet dates meld beautifully in this tossed leafy green mix. A splash of citrusy orange in the dressing and you have one decadent but refreshing starter salad.

Kitchen Tip:

Medjool dates are large and plump. Look for them in the produce section of the supermarket.
