Smarter peanut butter

Ingredients

  • 1 large carrot, peeled and thinly sliced

  • 1/3 cup natural peanut butter

Instructions

  • Boil carrots in a small saucepan of water until soft, about 20 min. Drain and transfer to a food processor or blender. Add peanut butter. Purée until smooth.

Nutrition (per serving)

Calories 34, Protein 1g, Carbohydrates 2g, Fat 3g, Fibre 1g, Sodium 5mg.

Add puréed carrots to peanut butter to cut calories and add a boost of healthy vitamins and fibre. Best of all, it tastes great.
