2 cups finely diced pineapple
2 cups finely diced watermelon
1 shallot, finely chopped
1/2 cup finely chopped cilantro
2 tbsp lime juice
2 tsp lime zest
2 tsp canola oil
1/4 tsp salt
COMBINE pineapple with watermelon, shallot and cilantro in a medium bowl. Stir in lime juice and zest, oil and salt.
