2 beets
1 large carrot
2 tbsp red wine vinegar
2 tsp olive oil
1/8 tsp salt
1/8 tsp pepper
PEEL and coarsely grate beets and carrot into a bowl.
WHISK red-wine vinegar with olive oil, salt and pepper in a separate bowl. Drizzle over beet mixture and stir to coat. Let stand 10 min before serving.
