Apple And Smoked Sausage Pasta

Chatelaine Triple Tested

This kid-friendly apple and smoked sausage pasta comes together in just 20 minutes.

Ingredients

  • 1/2 450-g pkg penne pasta

  • 142-g pkg baby spinach, about 8 cups

  • 1 tsp olive oil

  • 1 small onion, chopped

  • 2 garlic cloves, minced

  • 250 g cooked smoked turkey kolbassa, cubed

  • 1/2 cup half-and-half cream

  • 1 unpeeled red apple, chopped

  • 1/4 cup finely grated parmesan

Instructions

  • Cook pasta in a large pot of boiling water, following package directions but omitting salt, until al dente, 6 to 8 min. Drain. Return pasta to pot. Stir in spinach. Set aside.

  • Heat a large non-stick frying pan over medium-high. Add oil, then onion and garlic. Cook until onion is soft, about 3 min. Stir in kolbassa and cream. Bring to a boil, then reduce heat to medium-low. Simmer, uncovered, until flavour develops, about 2 min. Stir into pasta along with apple and cheese. Serve immediately.
