Wassail

Ingredients

  • 750-mL bottle dry red wine, such as cabernet sauvignon, or dry rosé such as cabernet franc

  • 2 cups pineapple juice

  • 2 cups apple cider

  • 2 cinnamon sticks

  • 1/4 tsp ground cardamom

  • 10 whole cloves

  • 1/2 cup brown sugar

  • 1 lemon, cut into thin slices

Instructions

  • In a large saucepan set over medium-high heat, warm wine with juices, spices and sugar. Stir occasionally until sugar dissolves and mixture begins to bubble. Then, reduce heat to low and simmer for about 20 minutes, uncovered, to develop flavors. Serve in a large heat-proof bowl or heated Crock-Pot with lemon slices on top. Wassail is wonderful served with Warm Brie in phyllo (this recipe is also available in the Recipe File) to begin Christmas dinner or any holiday party.
