Soy and orange pork

Ingredients

  • 1 tbsp butter

  • 1 pork tenderloin

  • 1/4 cup 3-fruit marmalade, orange or ginger

  • 3 tbsp soy sauce

Instructions

  • Melt butter in a large frying pan, preferably non-stick, set over medium heat. Slice pork into round pieces about 1 in. (2.5 cm) thick. Press down gently to form medallions. Add to pan and sauté until lightly browned, about 2 to 3 min per side. Add marmalade and soy sauce to pan and stir to mix. Turn the pork a few times to coat in sauce.

  • Reduce heat to medium-low. Cover and cook until sauce is slightly thickened and pork is cooked through, from 2 to 3 min. Place medallions on a plate and spoon sauce overtop. Terrific with mashed sweet potatoes and Brussels sprouts.
