Ingredients

  • 2 roasted red peppers

  • 2 garlic cloves

  • 1 onion

  • 1 jalapeno, optional

  • 500-g lean ground beef

  • 1 tsp dried basil leaves

  • 1 tsp dried oregano leaves

  • 1 tsp dried thyme leaves

  • 1/2 tsp salt

  • 1/2 tsp ground black pepper

  • 796-mL can diced tomatoes

  • 213-mL can pizza sauce

  • 1 tsp Worcestershire sauce

  • 2 cups baby spinach, chopped (optional)

Instructions

  • Coarsely chop roasted peppers. Mince garlic. Finely chop onion. Core and seed jalapeno, then finely chop. Place all in a large saucepan. Crumble in beef. Sprinkle with seasonings. Stir in tomatoes, pizza sauce and Worcestershire.

  • Bring to a boil, stirring often, over high heat. Then reduce heat and simmer, uncovered, stirring occasionally, until meat loses its red colour and sauce thickens slightly, 15 minutes. Spoon over English muffins, if you like. Sprinkle with spinach.

The kids won't notice the difference with our health-conscious sloppy joes! To make them even more nutritious, skip the kaisers and ladle over whole wheat English muffins.
