Pan-fried balsamic chops

Instructions

  • Lightly oil a frying pan just large enough to hold the chops and set over medium heat. Using a knife, nick edges of chops so they won't curl during cooking. Sprinkle both sides of pork with pinches of salt and pepper. Add pork to pan and cook until lightly golden, about 3 min per side. Then reduce heat to medium-low.

  • Meanwhile, in a small bowl, stir plum sauce with balsamic vinegar and Tabasco. Gradually pour plum-sauce mixture into pan (watch out ¿ it splatters), then turn pork to coat.

  • Cover and continue to cook until pork is glazed and cooked through, about 2 more min. Delicious with rice and broccoli or bok choy.
