Italian sausage calzone

Ingredients

  • 500 g pizza dough, or 1 calzone dough

  • 4 sweet or hot Italian sausages

  • 3 cups grated mozzarella

  • 1/2 cup stuffed green olives

  • 2 garlic cloves, crushed

  • 1/4 to 1/2 tsp cayenne pepper

  • 1 tbsp olive oil

Instructions

  • Prepare dough, letting it rise for 1 hour. When ready to bake, preheat oven to 500F (250C). Lightly oil a large baking sheet.

  • Prepare filling by sautéing sausages in a frying pan until done as you like. Slice sausages lengthwise, then slice into 1/4-inch (0.5-cm) thick pieces. Place in a medium-size bowl. Stir in cheese, olives, garlic and cayenne until garlic is evenly distributed.

  • Place dough on a lightly floured surface. Cut into 8 pieces. Pat 1 piece into a flattened round. Using a lightly floured rolling pin, roll into a 6-inch (15-cm) circle. Spread an eighth of the filling on lower half of circle, leaving a 1-inch (2.5-cm) border of plain dough. Brush dough edges with cold water. Fold top half of circle over filling. Firmly press edges of dough together to seal. Crimp edges with a fork.

  • Place on baking sheet. Repeat with remaining dough. Leave at least 1 inch (2.5 cm) between calzones. Then, lightly brush calzones with oil. Immediately place on bottom shelf of preheated oven and bake for 10 to 12 minutes, until puffed and golden. Serve piping hot with a huge spinach salad.
