Hot sausage tacos

Ingredients

  • 1 small onion

  • 1 red bell pepper

  • 4 chicken or turkey sausages, preferably hot Italian

  • 2 tsp chili powder

  • 1 tsp dried oregano

  • 1/2 tsp ground cumin

  • 12 regular taco shell

  • grated cheddar, optional

  • shredded lettuce, optional

  • chopped tomato, optional

  • sour cream, optional

Instructions

  • Preheat oven to 350F (180C). Coarsely chop onion and pepper. Lightly oil a large frying pan and set over medium-high heat. Cut sausages in half. Squeeze meat from casings into pan. Using a fork, break up meat and stir often to keep crumbly. Cook until meat is no longer pink, 6 minutes. Add onion, pepper and seasonings. Stir often until onion softens, 5 minutes.

  • Meanwhile, heat taco shells in preheated oven according to package directions. Place in a basket. Let everyone fill shells and add toppings.
