Hot Italian sausage stuffing

Italian sausage lends a touch of heat to traditional bread stuffing.

Ingredients

  • 2 675-g loaves sliced white bread, crusts removed

  • 3 Italian sausages, hot or mild

  • 1/4 cup butter

  • 3 onions, finely chopped

  • 1 tbsp Italian seasoning

  • 2 tsp dried sage

  • 1 tsp salt

  • 1/2 tsp pepper

  • 2 apples, peeled and chopped

  • 1/2 cup pine nuts, toasted (optional)

Instructions

  • Preheat oven to 375F. Spread bread on 2 baking sheets. Bake until lightly toasted, 12 min.

  • Cut into 1/2-in. cubes, about 15 cups. Place in a big bowl.

  • Squeeze sausage meat from casings into a large frying pan set over medium heat. Using a fork to keep meat crumbly, cook until no longer pink, 3 min.

  • Add butter, then onions, celery and seasonings. Stir often until onions are soft, 10 min. Add apples for last min of cooking.

  • Remove from heat and add to bread along with nuts. Stir well, pressing hot mixture into bread. Cool before stuffing bird.
