Breakfast muffin pizzas

Ingredients

  • 6 English muffins

  • 1 large tomato

  • 2 to 3 green onions

  • 6 slices cooked peameal bacon, or breakfast sausage links

  • 6 crisp slices bacon

  • 1 1/2 cups grated mozzarella

Instructions

  • Preheat oven to 450F (230C). Separate muffins into halves. Slice tomato in half, then squeeze out and discard seeds. Chop into 1/4-inch (0.5-cm) pieces and place in a bowl. Thinly slice green onions.

  • Slice peameal in half or slice or chop sausage. Cut bacon in 3 or 4 pieces. Have guests create their own pizzas by covering muffin half with bacon, adding a sprinkling of tomato and onion, then cheese. Place on an ungreased baking sheet and bake in centre of preheated 450F (230C) oven until cheese is golden, about 15 to 20 minutes. Serve right away.

To make a big hit with the younger set, lay out the fixings and let them create their own individual pizzas--for breakfast!

Make ahead

Seed and chop tomatoes, place in a small bowl and cover. Slice green onions and seal in a plastic bag. Grate, measure out cheese and seal in a plastic bag. Cook meat and seal in another plastic bag. Refrigerate for up to 1 day.
