Chimichurri is a favourite Argentinian sauce made of chopped parsley, cilantro, garlic, vinegar, and oil. For this version, cubes of avocado are folded into the sauce.

Instructions

  • IN a small bowl, stir the lemon juice, vinegar, garlic, salt, red pepper flakes, oregano, and black pepper together.

  • WHISK in the oil to blend, then stir in cilantro and parsley. Gently fold in the avocados.
